Prepare bacon on stove top or in oven until crispy.
Preheat oven to 200F, and preheat waffle iron.
Combine the dry ingredients in a bowl.
Melt butter and, after it cools a bit, mix in with buttermilk.
Separate eggs and mix 1 egg yolk in with wet ingredients. Reserve 2 egg whites in a separate mixing bowl.
Whip the egg whites with a hand mixer until soft peaks form.
Chop chives.
Shred cheese.
Combine wet ingredients with dry ingredients.
Mix in crumbled bacon, chives and 1/2 cup shredded cheese.
Mix in whipped egg whites.
Prepare waffle iron with vegetable oil spray.
Pour batter onto waffle iron and cover with a handful of shredded Mexican cheese.
Use your waffle iron's timing directions to prepare your waffle. Mine takes 4 minutes.
After four minutes, remove the waffle from the waffle iron, and transfer to a rack in a 200F oven. You may notice the waffle seems steamy and not crispy yet, but it will crisp up in the oven.
Allow waffle to stay in the oven for at least 5 minutes before serving, or keep until all waffles are ready.
Serve with additional chives to garnish and maple syrup on the side.
