Savory Bacon Cheese and Chive Waffles

Savory and sweet goodness coming at you in these breakfast/brunch style waffles. Salty bacon, crunchy cheese, chives and a just sweet enough waffle. Enjoy!

Equipment

Ingredients

Dry Ingredients

  • 1.25 cup flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup sugar

Wet Ingredients

  • 1 tbsp maple syrup
  • 3/4 cup buttermilk
  • 6 tbsp melted butter
  • 1 egg yolk
  • 2 egg whites, whipped to soft peaks

Mix-Ins

  • 4 strips bacon, crisped and crumbled
  • 3 chives, chopped
  • 1/2 cup shredded sharp cheddar or mexican cheese any sharp cheese can work

Toppings

  • 2 cups shredded mexican cheese for topping batter before baking waffle

Other

  • vegetable oil spray for waffle iron
  • 2 chives, chopped for garnish
  • maple syrup for serving

Instructions

  • Prepare bacon on stove top or in oven until crispy.
  • Preheat oven to 200F, and preheat waffle iron.
  • Combine the dry ingredients in a bowl.
  • Melt butter and, after it cools a bit, mix in with buttermilk.
  • Separate eggs and mix 1 egg yolk in with wet ingredients. Reserve 2 egg whites in a separate mixing bowl.
  • Whip the egg whites with a hand mixer until soft peaks form.
  • Chop chives.
  • Shred cheese.
  • Combine wet ingredients with dry ingredients.
  • Mix in crumbled bacon, chives and 1/2 cup shredded cheese.
  • Mix in whipped egg whites.
  • Prepare waffle iron with vegetable oil spray.
  • Pour batter onto waffle iron and cover with a handful of shredded Mexican cheese.
  • Use your waffle iron's timing directions to prepare your waffle. Mine takes 4 minutes.
  • After four minutes, remove the waffle from the waffle iron, and transfer to a rack in a 200F oven. You may notice the waffle seems steamy and not crispy yet, but it will crisp up in the oven.
  • Allow waffle to stay in the oven for at least 5 minutes before serving, or keep until all waffles are ready.
  • Serve with additional chives to garnish and maple syrup on the side.

Notes

  1. If you don't have buttermilk on hand, you can combine regular milk with 1 tbsp white vinegar for 10 minutes to create an equivalent buttermilk. Regular milk can also be used here. 
  2. If you don't have maple syrup, you can replace with 1 tbsp sugar. 
  3. I find that finely shredded Mexican cheese blend produces the most beautiful toasty looking crunch on the waffle, compared to some fancier cheeses, but you are welcome to try out different cheeses. 
  4. Although you don't have to whip the egg whites, this step makes for a lighter waffle. 
  5. The oven step is key for crisping up your waffle, and also helps to keep all the waffles warm while you are preparing multiple. 
  6. This recipe makes about 8 mini waffles or 3 large waffles, depending on what style of waffle iron you are using.
