Grilled Shrimp and Broccoli Slaw Lettuce Wraps

Ingredients

  • head butter lettuce
  • 40 pieces small shrimp with tails removed
  • 1 cup Best Green Goddess Dressing
  • 1 package broccoli slaw
  • 1 jar sweet hot pickled Jalapenos optional, I love Mrs. Renfro's brand

Shrimp Marinade

  • 1/4 cup olive oil
  • 3 tbsp taco seasoning
  • 1 teaspoon lemon pepper
  • 1 tbsp garlic powder
  • 1 tbsp cumin

Instructions

  • Start by placing all the marinade ingredients in a large ziplock bag along with the shrimp and mix well so shrimp are evenly covered with marinade.
  • Leave shrimp to marinade for 15 minutes at room temperature.
  • Preheat the grill at medium/high temp.
  • Mix up a batch of Best Green Goddess Dressing and combine with broccoli slaw in a large bowl.
  • Wash and dry the butter lettuce leaves.
  • Grill the shrimp on each side just until they turn pink on each side and appear cooked through, and then remove from heat.
  • Assemble each lettuce wrap with a large spoon of broccoli slaw, 4-5 shrimp (if small), more Best Green Goddess Dressing and top with any garnish you like (sweet/hot jalapenos, cilantro, parsley or shredded Mexican cheese are great options.)

Notes

  1. Recipe for Best Green Goddess Dressing
  2. Shrimp can be marinaded for up to an hour. I avoid using lemon during the marinade step because it can dry out the shrimp before grilling. Lemon juice can be squeezed onto the shrimp after grilling.
