Banana Ice Cream-ish

This post is inspired by the recipe One-Ingredient Banana Ice Cream from New York Times Cooking. My quest for a healthy banana recipe began after my neighbor brought over 2 large bunches of bananas for our family. In trying to begin a healthier eating pattern, I was hoping for something other than our beloved banana bread for these bananas. 

To my surprise, I came up on this amazing concept-single ingredient Banana Ice Cream-ish.

Healthy…check, delicious…check, can eat as much as I want and still feel good about myself…check! Sounded just perfect to me! 

So banana ice cream is a dessert made out of….well, just bananas! Essentially, you take frozen bananas, process them in the food processor, and mix in whatever mix-ins you want. And there you have it! Banana Ice Cream-ish.

One trick to remember to make your life easier is to peel and maybe even cut up the bananas before freezing them. Once frozen, pop the in the processor and watch the magic unfold.

At first, the processed banana looks like wet sand. I found that I had to continually press the bananas back down to contact the blade, as they would stick up the sides of the bowl. Once the bananas started to get creamy, then the processor really took over and completed the whole job. Voila! Just like ice cream!

I was very impressed to see the texture that came of these bananas. It reminds me of a delicious creamy soft serve! In my house, my daughter became very interested, and took over half the batch for herself. She mixed in a dollop of Nutella and chocolate chips, pulsed them together, and had something akin to a Dairy Queen Blizzard! I have to admit that hers was better than mine, but I’m focusing on making healthier choices, so I’m ok with that. : )  The NYT Cooking link offers some yummy suggestions for other mix ins.
