Creamy dressings are just so comforting on all kind of salads, vegetables and proteins like chicken or fish. Chives bring me back to my childhood to one of my favorite memories of grocery shopping with my mom. I used to always stop for crackers with cream cheese and chives as a sample at our local grocery store, and I still adore that creamy chive flavor.
This recipe gives me another reason to use my window sill chives that are sprouting longer roots by the day.
For this recipe, you just combine a quarter cup mayonnaise, a quarter cup sour cream, juice of one lemon, a pinch of salt and pepper and 5-10 chives (depending on how much you love the chive flavor). Process this in food processor for 30 seconds, or until your chives are well incorporated and chopped into bits.
I used this for my shredded roasted brussel sprout salad, but this is incredibly versatile. You could pour this over tacos, chicken, fish, salad, or as a vegetable dip. Enjoy!
