Egg Roll in a Bowl

This recipe is so great for when you’re wanting something low carb, yet fully satisfying with veggies and protein. The crunch of the slaw combined with the salt, garlic and spice will leave you coming back for seconds. This recipe is even better as a leftover. Enjoy!

Egg Roll in a Bowl

Ingredients

  • 6 links sweet italian sausage remove from casing
  • 3 cloves garlic
  • 1/4 cup low sodium soy sauce
  • 1 package cole slaw
  • 1 tsp sriracha
  • 1 knob garlic peeled and shredded
  • 1 tbsp olive oil

Instructions

  • Remove sausage from its casing and place in a pan with olive oil on medium/high heat.
  • Stir and break up the sausage to form a ground sausage texture while browning the meat.
  • Add in minced garlic and ginger once the meat is nearly browned and cooked through.
  • Add package of cole slaw, and stir over medium heat.
  • Add soy sauce and continue stirring until cole slaw is wilted.
  • Add sriracha and additional seasoning to taste.
  • Serve in a small bowl or lettuce wrap.
