Over Easy Egg, Tortilla and Avocado

This breakfast recipe uses a perfect over easy egg topping a grilled corn tortilla, garnished with avocado slices sprinkled with fresh lime juice, fresh cilantro and my favorite hot sauce, Cholula. If you like Mexican egg breakfasts, you will love this! 

How to Make a Perfect Over Easy Egg

I first learned how to make a perfect over easy egg from one of my favorite chefs, Alton Brown. Alton really explains the science of cooking, and I just love him! Check out his Perfect Over Easy Eggs Recipe. I’ve adapted it a tiny bit and provide some tips based on my experience. 

Step 1. Foam the Butter

Heat a tablespoon of salted butter in a small pan over medium high heat until it’s fully melted and finished foaming. Swirl it around the pan as it starts foaming to coat the whole pan. If you try less butter to be healthier, which I have tried, this recipe tends not to work as well because your egg will stick to the pan. Not sticking is important here. If your heat is too high here, the butter will brown too much, and if too low, it won’t foam. Medium high heat for the beginning is JUST right.

Step 2. Crack the Egg

As soon as the foaming has stopped, lower the heat to low, and crack the egg into the pan. I like to do one egg at a time to get the perfect over easy, so I just crack it straight into the pan.  If you are making more than one egg at a time, cracking into a cup or bowl first can help you evenly cook multiple eggs and also to be sure your yolks haven’t broken before you put them in the pan. 

Tilt the pan a touch after you crack it to keep the egg to one side of the pan so all the white doesn’t spread across the pan. Cook over low heat for 1 minute. Tip: If your butter is browning too fast, just pull the pan off the heat for a bit.

Step 3: Flip the Egg

After 1 minute over low heat, flip the egg. This part is a little tricky! 

Tip: Jiggle the pan a bit to be sure the egg is not stuck, and gently unstick it with a spatula if needed before attempting to flip. 

Alton recommends that as you flip, raise the pan to meet the egg mid air to prevent splashing of the hot butter. Love that tip!

Next, count to 10 slowly, and then flip it back!

Step 4. Flip the Egg Back

After counting to 10, flip your egg back. At this point, how long you leave it depends on how runny you like your egg. 

Tip: One way to check if it’s still runny is to just tap your finger over the center to see if it’s still liquid inside. When it starts to harden, you’ll feel it firm vs. jiggly and liquid inside. I like to leave it for about 30 seconds and then take it off for a golden runny yolk. Salt and pepper the egg, and there you have it! Yummm!

 

Serving the Egg

This is my favorite way to serve a perfect over easy egg: a grilled corn tortilla garnished with avocado sprinkled with fresh lime juice, fresh cilantro and my favorite hot sauce, Cholula!

I just grill the tortilla on the stove top grill as I’m starting up my egg, but you could also just microwave this for 10 seconds and toast it. When you see the tortilla bubbling up, you know it’s ready. A flour tortilla can also be used here.

Remove the tortilla from the heat, and top with the egg by carefully transferring it using a spatula. Layer your avocado, cilantro, lime and hot sauce. You can substitute Sriracha or Truff hot sauce here. Both would also be excellent!
