Boil a large pot of water with generously salted water and dashes 5 drops liquid smoke.
Trim the artichoke stems.
Trim sharp tips of the leaves.
Boil the whole artichokes for 15 minutes.
Drain artichokes, and allow to cool.
Cut artichokes down the middle of the stem through the top of the artichoke.
Remove the hairy inside of the artichoke.
Preheat the grill.
Prepare oil for grilling by combining olive oil, lemon pepper and 2 dashes of liquid smoke.
Once grill is heated, place the artichokes on the grill and brush with seasoned oil. Cover the grill.
Grill for 16 minutes, flipping the artichokes and brushing with seasoned oil every 4 minutes, until nicely charred on each side.
Removed from grill, and serve with Smoky Garlic Caper Lemon Dip.
