Smoky Artichokes with Garlic Lemon Caper Dip

Grilled Artichokes

The artichoke is a vegetable that requires a little time for preparation, but it’s oh so worth it! This recipe is a family favorite-lemony and smoky, and oh so delicious with my Smoky Garlic Lemon Caper Dip. Liquid smoke amps up the flavor of both the artichokes and the dip in this recipe, and I highly recommend it! These artichokes are great for a weekend night family dinner and are also a hit for any party.

Just look at this gorgeous vegetable.

Start by trimming the stem and the sharp tips off the leaves of the artichoke using kitchen shears or a knife. Also peel off any leaves growing off the stem.

Boiling Artichokes

Once prepared, place the artichokes in heavily salted, boiling water with a few dashes of liquid smoke.  The artichokes may float the the top and will need some flipping to fully submerge after they are boiling. Boil for 15 minutes. 

After 15 minutes, drain and allow the artichokes to cool on a sheet pan. Next, cut the artichokes down the middle and remove the inner hairy part of the choke.  Then prepare the oil you’ll use to brush the artichokes on the grill by combining 1 cup of olive oil, 1tbsp lemon pepper, the juice of one lemon and a couple dashes of liquid smoke.

After placing the chokes on a preheated grill, brush them with the seasoned oil and grill over medium  heat, covered, for 16 minutes, until nicely charred on both sides. You’ll want to flip them and brush with oil every 4 minutes while grilling. 

After 20 minutes, once the artichokes look nicely charred on both sides, remove them from the grill. Serve alongside the Smoky Garlic Lemon Caper Dip

Smoky Artichokes with Garlic Caper Lemon Dip

This is a recipe for grilled artichokes with smoke and lemon flavor, served with a side dip.

Ingredients

  • 4 artichokes

Seasoned Oil for Grilling

  • 1 cup olive oil
  • 1 tbsp lemon pepper
  • juice of half a lemon
  • 2 dashes liquid smoke

For Boiling

  • 1 pot boiling water, large enough to fit the artichokes
  • 5 drops liquid smoke
  • generous salt

For Serving

  • 1 cup Smoky Garlic Lemon Caper Dip see link to recipe in notes

Instructions

  • Boil a large pot of water with generously salted water and dashes 5 drops liquid smoke.
  • Trim the artichoke stems.

  • Trim sharp tips of the leaves.
  • Boil the whole artichokes for 15 minutes.
  • Drain artichokes, and allow to cool.
  • Cut artichokes down the middle of the stem through the top of the artichoke.
  • Remove the hairy inside of the artichoke.

  • Preheat the grill.
  • Prepare oil for grilling by combining olive oil, lemon pepper and 2 dashes of liquid smoke.
  • Once grill is heated, place the artichokes on the grill and brush with seasoned oil. Cover the grill.

  • Grill for 16 minutes, flipping the artichokes and brushing with seasoned oil every 4 minutes, until nicely charred on each side.
  • Removed from grill, and serve with Smoky Garlic Caper Lemon Dip.
