My family goes crazy for this! It’s super fast, easy, and healthy! It does not get any better.
Start with a quick 15 minute marinade of the shrimp with all your favorite Mexican spices and olive oil while preheating the grill. Follow with a quick flash grill just to turn each side pink, and the shrimp is ready! I could eat these on their own all day, and they still taste amazing the next day, if you have leftovers.
Next, whip up a batch of Best Green Goddess Dressing and stir that in with some Broccoli Slaw.
Assemble shrimp on lettuce, top with Green Goddess dressed broccoli slaw, and add some extra sauce on top! That’s pretty much it!
In my family, we like to add sweet/hot jalapenos on top, but you could also add shredded cheese, cilantro or hot sauce.
This recipe is also great on tortillas for anyone who wants a more filling version! Delicious!!

Notes
- Recipe for Best Green Goddess Dressing.
- Shrimp can be marinaded for up to an hour. I avoid using lemon during the marinade step because it can dry out the shrimp before grilling. Lemon juice can be squeezed onto the shrimp after grilling.
