Lemony Breadcrumb Green Beans

Alright friends, this is another veggie dish for the “easy and delicious” category! You are going to love it! Salty, buttery, crunchy Panko breadcrumbs absorb the acidity of the lemon and combine with fresh crunchy green beans and garlic for a gorgeously green and mouth watering vegetable dish that you’ll crave again and again. And it only takes 10 minutes to make! What a way to get your veggies!! Enjoy!

Lemony Breadcrumb Green Beans

Ingredients

  • 12 oz fresh green beans
  • 1/2 cup Panko bread crumbs
  • 1 tbsp salted butter
  • 1/2 tsp kosher salt
  • 2 lemons, juiced
  • 3 garlic cloves, minced
  • 1 pinch of pepper
  • 1 bunch fresh parsley
  • 1 tsp olive oil

Instructions

  • Melt butter in a pan on the stovetop and add breadcrumbs, stirring to toast over medium high heat.
  • Add trimmed and washed green beans to the toasting breadcrumb mixture.
  • Once breadcrumbs start to turn brown, add lemon juice, salt, and pepper. Continue stirring over medium heat until the breadcrumbs are toasty brown and green beans are also browning slightly.
  • In the last minute of cooking, over medium/low heat, add 1 teaspoon olive oil to an open area of the pan. Mince garlic into the olive oil, and cook until the garlic becomes fragrant (1 minute). Don't let the garlic burn. Then mix the garlic in with the green bean breadcrumb mixture.
  • Top with fresh parsley, stirring into the mixture as you turn off the heat.

Notes

  1. If you add the lemon juice to the bread crumbs before they are toasted, they may get mushy. This is ok, as you can continue to heat/saute and the breadcrumbs will become crunchy again. 
  2. Most of the flavor in this recipe is deeply absorbed into the breadcrumbs. Make sure you taste the green beans with the bread crumbs to assess seasoning. Additional salt, pepper, garlic and lemon can be used to taste if needed. 
  3. This recipe would work with other vegetables like broccoli or cauliflower too!
  4. If you don't have fresh herbs on hand, skip them. The recipe is full of flavor even without fresh herbs.
