Savory and sweet goodness coming at you with these savory bacon cheese and chive waffles. The balance of salty and sweet is just right in this recipe, and the maple syrup side brings me back to many bacon covered in maple syrup experiences I’ve had in the past. Yummm!
After preheating your waffle iron and an oven to 200F, you’ll want to prep your bacon, chives and shredded cheese.Â
Then, combine the dry ingredients in one bowl and the wet ingredients except for egg whites in another bowl. Whip the egg whites with a hand mixer to soft peaks. This extra step gives your waffles an extra light texture.Â
Then combine wet and dry ingredients, followed by the chives, cheese and bacon, and lastly, folding in the egg whites. You are on your way to cheesy bacon chive waffle goodness!
Dollop your batter onto a prepared waffle iron and top with shredded cheese before baking the waffle. This will give you a toasty golden crunch on top of the waffle that really takes these over the top!
Next, wait the 4 minutes or so until your waffle is done. (Follow your waffle iron’s timing directions for best results.)
And Voila! Your bacon cheese chive waffle may be soft and steamy at this point, and that’s why you’ll want to transfer it to an oven rack next for at least 5 minutes or until all your waffles are ready to serve. The oven will get rid of the rest of that steam and moisture, and result in perfect crispy, cheesy waffle perfection.Â
Serve your savory waffle with a garnish of chopped chives and a side of maple syrup for those who love the salty sweet combination. It’s truly divine! Enjoy!
P.S. If you prefer more savory and less sweet, skip the maple syrup in the waffle batter and as garnish. It’s delicious as a savory waffle alone as well!!

Instructions
- Prepare bacon on stove top or in oven until crispy.
- Preheat oven to 200F, and preheat waffle iron.
- Combine the dry ingredients in a bowl.
- Melt butter and, after it cools a bit, mix in with buttermilk.
- Separate eggs and mix 1 egg yolk in with wet ingredients. Reserve 2 egg whites in a separate mixing bowl.
- Whip the egg whites with a hand mixer until soft peaks form.
- Chop chives.
- Shred cheese.
- Combine wet ingredients with dry ingredients.
- Mix in crumbled bacon, chives and 1/2 cup shredded cheese.
- Mix in whipped egg whites.
- Prepare waffle iron with vegetable oil spray.
- Pour batter onto waffle iron and cover with a handful of shredded Mexican cheese.
- Use your waffle iron's timing directions to prepare your waffle. Mine takes 4 minutes.
- After four minutes, remove the waffle from the waffle iron, and transfer to a rack in a 200F oven. You may notice the waffle seems steamy and not crispy yet, but it will crisp up in the oven.
- Allow waffle to stay in the oven for at least 5 minutes before serving, or keep until all waffles are ready.
- Serve with additional chives to garnish and maple syrup on the side.
Notes
- If you don't have buttermilk on hand, you can combine regular milk with 1 tbsp white vinegar for 10 minutes to create an equivalent buttermilk. Regular milk can also be used here.Â
- If you don't have maple syrup, you can replace with 1 tbsp sugar.Â
- I find that finely shredded Mexican cheese blend produces the most beautiful toasty looking crunch on the waffle, compared to some fancier cheeses, but you are welcome to try out different cheeses.Â
- Although you don't have to whip the egg whites, this step makes for a lighter waffle.Â
- The oven step is key for crisping up your waffle, and also helps to keep all the waffles warm while you are preparing multiple.Â
- This recipe makes about 8 mini waffles or 3 large waffles, depending on what style of waffle iron you are using.Â
