“Summer is Coming” Cocktail

Summer IS coming, though it may feel different than prior years. For tonight’s Sunday night cocktail, I share a gorgeous ruby orange red beauty that will help transport you to warm summer nights and whiling away the time. We need a little bit of this right now, in my opinion. This summer cocktail is big on fruit, tart and citrus, and very easy to drink.

Begin with about 6 strawberries and 3 apricots, and process them in a small food processor or blender.

Add about 8 leaves of mint, like these gorgeous leaves my husband planted in our yard today.

Process these all together until you get a smooth puree.

To a shaker, add: 

  • juice of 3/4 of a lemon
  • 1 shot of gin
  • 3/4 shot of aperol
  • 3 tbsp of strawberry apricot mint puree

Shake with ice until cold.

Pour this into a martini glass using the strainer on the shaker glass.

Equipment

  • food processor or blender

Ingredients

Strawberry Apricot Mint Puree

  • 6 strawberries
  • 3 apricots
  • 8 mint leaves

Cocktail

  • 3/4 shot Aperol
  • 1 shot Gin I used Ungava (Any good quality Gin, Tequila or Vodka can also work here.)
  • 3 tbsp Strawberry Apricot Mint puree
  • juice of 1 small lemon

Instructions

  • Combine chopped strawberries, apricots and mint in a food processor or blender. A mortar and pestel could also be used to muddle the fruit if you don't have an appliance.

  • In a shaker glass, combine 3 tbsp fruit/mint puree, a shot of gin, 3/4 shot of aperol and juice of 1 lemon. Shake with ice for 60 seconds.

  • Pour into a martini glass.
  • Enjoy!!

Notes

  1. The strawberry, apricot and mint amounts here will make enough puree for 3 cocktails. 
  2. If you prefer to make more than 1 cocktail, multiply the puree, aperol, gin and lemon amounts times the number of cocktails you'd like to make.
